Former Royal Navy chef Michael Redhead, was jailed for six months by a crown court judge and his company Michael Redhead Associates was fined £50,000, in a £1.1m food fraud that saw almost 400,000 packs of 'fake' sea bass sold in 600 Iceland outlets across the country.
The fraud was uncovered by Hull City Council Trading Standards who submitted samples of fish to Public Analyst Scientific Services in Hull for species testing. The fish was tested by DNA sequencing and found to be Japanese sea bass, a form of perch, and not Atlantic sea bass.
